Founded in 2020, Noemi is Santa Barbara's first Roman-style pizzeria. Located in the San Roque neighborhood, we will serve pizza al taglio (by the cut), calzones, paninis, salads, and more. We also offer a curated selection of craft beer and wine, all chosen to complement our delicious pizzas.
The secret is in our crust. We ferment our dough for up 96 hours. Why? After 96 hours the dough has taken on a delicious life of its own. A lot of the sugars and starches of the flour are broken down during the long maturation process, and it creates a crust that is sublimely light with a crackling crisp exterior and a delightfully tender interior. This process makes the crust healthy and digestible so it will not sit heavy in your stomach. Go ahead and eat another slice!
